Flank Steak
1 T. olive oil
1 T. Balsamic vinegar
2 cloves garlic, minced
1/2 cup shredded mozzarella
1/3 cup green onions
1/4 cup red pepper, cut into thin strips
coarse salt and pepper
Put flank steak in a ziploc bag and add oil, balsamic vinegar and garlic. Marinade overnight OR in Lindsey's recipe she marinates it for 20 minutes. Spread cheese, onions, peppers on steak. Season with salt and pepper. Roll up tightly; tie with kitchen twine and season again with salt and pepper. Place, seam side down on a rimmed baking sheet; roast until juices run clear, 35-40 minutes. Let rest for 10 minutes; remove twine and slice. (My family liked it with a little balsamic vinegar on the side to dip the meat in). So good! Enjoy!
