Nicea's Favorite Fried Rice

This recipe I got off of GTU and is another family favorite.  My girls actually ask for it the next day, so you know its good if my picky eaters will eat it a second day!  I think I've shared it with a couple of you, but thought I'd post it for everyone.  Easy and SO good!

1-2 chicken breasts (cut into small pieces)
3 scrambled eggs
2 carrots (finely grated or chopped)
1/2 white onion (finely chopped)
3/4 cup frozen peas
1/2 cup butter
1-2 tsp. minced garlic
2 cups white rice (not instant)

Marinate chicken in soy sauce.  I usually cut up my chicken first and set it aside in the soy sauce to marinate while I chop up the other ingredients.  Cook chicken in small amount of olive oil.  Add carrots and onions and saute until clear.  Add frozen peas.  Cook until soft.

In a separate pan, make your rice and then add to the chicken and veggie mixture.

In another pan, scramble 3 eggs, chop finely and add to the chicken mixture.  

Melt 1/2 cup (yes, 1 cube) of butter, add garlic cloves to butter, stir and add to mixture.  Mix all together.  Add soy sauce to taste.
