This is from Cooking Light.
1/2 C reduced fat mayonnaise
1 tsp minced fresh tarragon
2 tsp fresh lemon juice
4 whole wheat flatbreads (such as Flatout)
2 Cups shredded Romaine
2 Cups chopped tomato
4 center cut bacon slices, cooked and drained
2 Cups shredded skinless boneless rotisserie chicken
Combine first ingredients in a small bowl. Spread 2 tsp mayonaisse mixture over each flatbread. Top with 1/2 C lettuce, 1/2 C tomato, 1 bacon slice, crumbled and 1/2 C chicken. Roll up.
O.K. so what we actually ate didn't resemble this recipe that much in the end; I used ranch dressing instead of the mayo, regular tortillas for the flatbread and nixed the tomatoes which I don't like and added some grated cheese but it was still good and EASY. My kids loved that they could make their own the way they wanted. The little bit of bacon gave it some extra flavor without being too bacony.
